Feels like a bit of stupid question, but I can't see where I put a signature in the User Control panel
Any pointers??

Afaik, nowadays you can only set a signature after a certain number of (approved) posts - might be 10, or 20.
(Reason: Too much spam abuse.)

As soon as it's available, you can find it here: ucp.php?i=ucp_profile&mode=signature

Precisely as gregster explained. To confirm, it is currently 10 posts, so very soon I see.
